Live Well: The Best Of!

Welcome to the All-Star post of the Live Well series provided by my very own sister, Lindsay Wampler.

Be sure to look back into the past year of Lindsay's Live Well advice posts, and please feel free to share her wisdom with your family and friends!

LIVE WELL: The Best Of

Beverage Boost from Live Well: JANUARY

New Year's Mango Mojito Mocktail
Serves 4

32 oz. sparkling water
1 mango
Handful of mint sprigs (about 10-15)
1 lime, sliced
Ice

Juice mango and mint through an electric juicer*. Scoop ice into 4 glasses, pour juice into glasses and top with sparkling water. Garnish with a slice of lime and extra mint leaves. Cheers!

*If you do not have a juicer, you can add to a blender or food processor to create the juice, making sure to peel the mango before blending.

Linguine with Tomato Sauce
Serves 6

1 pound linguine (I suggest gluten-free variety by Ancient Harvest)
4 pounds tomatoes, coarsely chopped with reserving juices
1 cup fresh basil
1 large clove garlic, thinly sliced
1/4 cup olive oil
1 1/2 teaspoon salt
1/4 teaspoon pepper

Heat oil in large saucepan over medium heat and add garlic; cook until fragrant (~30 seconds). Add tomatoes and their juices, salt, and pepper; simmer, stirring occasionally until tomatoes break down and sauce thickens (~45-50 minutes). When sauce has 20 minutes left to cook, cook the pasta. Mix pasta, sauce, and basil together.

Enjoy!
